Black Mustard ( Kali Sarso)

In the Brassica family, the seeds (also called fruit pods) come from the mustard plant. Black mustard
seeds get a well-deserved reputation for their spicy
flavour and smoky scent. Black mustard seeds are most commonly fried in oil in Indian cuisine, rendering them sweet and soft while releasing a lingering aftertaste.

Yellow Mustard

Yellow mustard seeds have been used for the processing of mustard pastes and are better than black mustard for this purpose. By first mixing the seeds in wine, vinegar or water, you can easily make your own mustard sauce.

Fennel (Saunf)

Fennel is a flowering plant species in the carrot family. It is a hardy, perennial herb with yellow flowers and feathery leaves. It is indigenous to the shores of the Mediterranean but has become
widely naturalized in many parts of the world, especially on dry soils near the sea-coast and on
riverbanks.

Black Pepper (Kali Mirch)

Black pepper, (Piper nigrum), also called pepper, perennial climbing vine of the family Piperaceae
and the hotly pungent spice made from its fruits. Black pepper is native to the Malabar Coast of India and is one of the earliest spices known. Widely used as a spice around the world, pepper also has a limited usage in medicine as a carminative (to
relieve flatulence) and as a stimulant of gastric secretions

Fenugreek (Methi Dana)

Fenugreek has the advantage of reducing blood sugar levels, raising testosterone and increasing milk production in breastfeeding mothers, based
on the available evidence. Fenugreek can also decrease the level of cholesterol, lower
inflammation and help regulate hunger, but more research is needed in these areas depending upon the situation of the individual.

Carom Seeds (Ajwain)

Boondi is popularly used to prepare raita in North India. Boondi raita typically contains curd boondi (which has been soaked in water to make it soft,
then sieved) and seasonings of salt, chilli, and Raita Masala. It is eaten as a side dish with pulao or
any other meal.

Green Cardamom (Hari Elaichi)

Green cardamom has a very large multitude of purposes and is an aromatic spice. The plant has
leafy-rooted deep stems, large white or pale green leaves, pale green fruits and black seeds. The

time
